There are many different methods of applying discounts to groups of Products such as Price Class Discounts, Category Discounts, Coupons by Role, Member Pricing etc. However the ability to setup and redeem coupons during checkout for a specific Category is currently not available but I do think it would be a great enhancement of the Coupon Management section of the Cart.
