There are UDF field options for the following pages:

  1. Step 1
  2. Product details
  3. Confirmation page

Which page are you referring to?

Step 1.

It allows me to enter the values, but they are not stored in the database, or shown anywhere when viewing the orders.

There are UDF fields are stored to the following tables

  1. Step 1 - Customer table
  2. Product details - Orders table
  3. Confirmation page - Orders -table

The UDF fields on step 1 are saved to the customer table but we have not added them to the manage order details screen. The UDF fields from the product details and confirmation pages should be viewable in in manage order details
